Chicken Noodle Soup

Whip up a pot of Chicken Noodle Soup from scratch and you’ll be hooked! This recipe takes it to the next level with Reames frozen egg noodles – total game-changer!

Ingredients

  • 1/2 Tbl butter
  • 2-3 ribs celery
  • 3-4 large carrots
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 small piece fresh ginger, skin removed
  • 10 cups chicken stock or broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp dried thyme
  • 1/8 tsp rosemary
  • 1/8 tsp crushed red pepper flakes
  • 1 bag of Reames frozen homemade egg noodles
  • 3 cups rotisserie chicken
  • 1 tsp better than bouillon chicken flavor (or more as needed)

Directions

  1. Add butter, diced celery, diced onion and carrots to a large stock pot over medium-high heat.  Saute for 3 minutes.  Add garlic and cook for another 30 minutes.
  2. Add cicken stock and season the broth with rosemary, thyme, crushed red pepper, salt and pepper.  Add fresh ginger root.  Taste and add a spoonful of “Better than Bouillon” as needed.
  3. Bring broth to a boil.  Add noodles and cook according to the package directions (20 minutes).  Be cautious not to overcook them.  Remove pot from heat as soon as they are tender.  The noodles will continue to cook once you remove the pot from the heat.
  4. Add chicken meat from the rotisserie chicken.  Taste the broth again and add more seasonings if needed.
  5. Store leftovers in an airtight container in the refrigerator for 4-5 days.
